Looking at the only video we have, it looks like the car was in the air before the fence. Perhaps it got lifted by the boundary between the gravel and tarmac. Fence acted as a ramp.

That would be an universal solution for car racing.

But curiously the top 20 drivers in the sport, who have no problem whatsoever racing down a 240 km/h chicane with zero escape space if Aramco pays enough, can't be arsed to ruin a lap on "normal" tracks if they make a mistake they shouldn't be making at their level.

Unfortunately motorbike racing is another matter, as there are evident pros and cons of both gravel and asphalt escape roads.

Isn't that Porsche already on it's roof coming into the shot? This frame looks like he flipped coming next to the fencing and hitting tyre barrier on it's roof with rear wing first. At least it looks like rear wing mountings for this cars

That is the downside of gravel, but still the fence should have kept it from ending up in the grandstand.

There are straight tyre marks in the gravel up to near the barrier. If they're from the same Porsche, it dind't flip in the gravel trap.

I'm not sure, but probably there's a second, short asphalt strip between the gravel and the tyre barrier. Having such a strip is dangerous and doesn't make much sense (maybe track workers can access the barrier more quickly?).

Still it's quite puzzling how that small transition could have flipped the car end over end in such a short space.

I guess with the only angle they seem to have of that part of the track, there isn't much to see with all the recovery vehicles there.
